Low Carb BBQ Topped Meat Loaf
another tasty meat loaf recipe with almost no carbs
Ingredients:
- one packet of instant onion soup mix
- 2lbs ground beef
- half an onion chopped fine
- 2 eggs
- 1/4cup bread crumbs
- 2 tablespoons parsley
- 1 teaspoon oregano, basil or thyme
- 1 teaspoon pepper
- half teaspoon salt
- low calorie / low carb BBQ sauce

1. Preheat oven to 375. Combine all ingredients except for BBQ sauce. Spray meatloaf pan with non-stick spray.
2. Put mixture into meatloaf pan and bake for 45 min
3. after 45 min, remove and spoon on the BBQ sauce to coat the top. bake additional 5min.
give you about 5-6 servings with about 6 carbs each mainly from the breadcrumbs.

Chicken Parmesan Personal Pizzas
If you do a cheat day or a cheat meal every few weeks, here is a good pizza recipe
Ingredients
- either a 3 pack of personal pizza crusts or one big one
- mozzarella cheese
- parmesan cheese
- 2 chicken breast, previously grilled, cut up into tiny pieces or can use the chicken breast meat that comes in a can if you are in a hurry
- 1/2 cup Ragu "no sugar added" pasta sauce
- optional ingredients, chopped onions, black olives, sliced mushrooms, pepperoni slices, green peppers
1. for this meal ill be adding the onions, olives, mushrooms... combine the chicken, pasta sauce, onions, olives, mushrooms in bowl. easier that way..less hands-on needed. preheat oven to 400
2. add 1-2 spoonfulls of the sauce on the pizza crusts
3. Pour the toppings onto the crusts and spread around.. salt / pepper to taste now.. , sprinkle parmesan cheese on top now..dont be shy with it
4. Now add the mozzarella cheese. bake for 10-12 minutes or until the cheese is melted.
5. Blamm.
this is for one of those days that you are trying to impress your lady or taking a break from the low-carb lifestyle for a day. Better than calling Dominos Pizza too.

No Carb Dinner - Eggs and taco meat
you know you love eating breakfast for dinner.. since i just hit the jackpot at kroger getting all those marked down eggs..i jumped on my usual breakfast for dinner tonight.. my post gym meal
-5 medium eggs scrambled up with 1/2 cup of the previously posted Breakfast Taco Meat
just too easy, add some taco bell hot sauce on top.. and youve got yourself a no carb dinner. just like a breakfast burrito you get in the morning minus the high carb tortilla.

Corn skyrockets..eggs will cost more
yeah, im sure that will happen at some point. but if you keep your eyes open when you shop for groceries and dont just grab items off the shelves without looking at prices, you can really get some good deals, my weekly kroger run:
- 3 dozen large "Private selection, all natural eggs" ..the happy chicken, natural fed, high omega 3 type..usually sells for $2.99+ .. marked down to move fast at .99cents (expires on 29jun)
- 2 30pack kroger medium eggs for $1.89 each
if i have to pay full price for some reason, my cutoff is about 10cents per egg..so any sale or markdown event needs to be under that..
oh, and the Stayfree panty liners....free..on sale $1.99, coupon for $2.00.

Low Carb Bacon Chicken Alfredo
Low Carb Bacon Chicken Alfredo - this is the modification of a previous pizza recipe.. just as tasty without the crust and really low carb
Ingredients:
- 4 chicken breast, rinsed and cut into small pieces
- 1 pack bacon (either turkey bacon or regular)
- 1 onion chopped fine
- Jar of Alfredo Sauce
- 1 can black olives
- 1 can mushrooms
- garlic pepper / salt
1. Cook bacon on george forman grill. when done, slice up into small pieces and put in bowl. In wok, cook chicken over medium high heat. drain off liquid as it accumulates. when almost no pink, add the onions and cook additional 5 minutes..
2. Add the olives, mushrooms, bacon, 1 teaspoon salt, 1 tablespoon garlic pepper. stir till heated. turn heat to low.
3. Add half to 3/4 of the jar of alfredo sauce and stir throughly. when heated do a taste test.. add more pepper/salt/alfredo sauce to taste.
4. When serving top with shredded cheese .

what food inflation?
another good weekly trip to Kroger, picked up some ground beef marked down to move fast. $4.19 for 3lb logs. comes out to $1.40 a pound vs the "on sale" meat at $2.99 a pound... keep paying full price suckers..thats what the freezer is for.
Low Carb Tex Mex Burgers
Super easy burgers to make
Ingredients:
- 1lb ground beef
- 1/4cup salsa
- 1/2 onion chopped fine
- 1 jalapeno chopped fine
- 1 teaspoon each chili powder, salt, pepper
Cant get much easier than this, combine all ingredients and form into patties and put on george foreman grill.
Top patties with desired fixings when done.
Today im adding no carb mayo, tacobell hot sauce packet, few more onions, slice cheese. you dont need a bun, thats where all the carbs are..break out that knife and fork and dig in.. when one of your fat buddies laughs that you are eating it without a bun, point to his fat belly and tell him thats why hes fat and youre not. BLAMM.

Eggs and Free Soap
did some extreme couponing today, there is a walgreens in same shopping center as the gym.. this week eggs are on sale there for .99cents a dozen.. 3 bar packs of ivory soap on sale at .99cents each.. and had 2 coupons for save $1.00 each on ivory soap.. so got the soap for free.
the hardest part about extreme couponing is finding the coupons and finding the deals.. there are people on twitter and websites that do all the hard work for you.. finding the weekly deals at the local stores and matching it up with the coupons that have been in recent sunday inserts.. the key is to save those inserts, just keep them on a shelf and dive in when something you need matches up.. i follow the krazycouponlady on twitter.. lots of good info on free stuff there, here is the deal on ivory soap from her site Ivory soap deal

Low Carb Chili Pot Pie
modified this recipe to make it low carb:
Ingredients:
- 2lbs ground beef
- Jar NoSugar Added Pasta Sauce
- can Chedder Cheese Soup
- one onion chopped small
- two green peppers chopped small
- one can sliced mushrooms
- chili powder, black pepper, salt
1. in wok, cook ground beef, drain off liquid as it accumulates.
2. when almost no pink is remaining, add the bell peppers and onions and cook additional 5-7minutes until vegetables are tender.
3. Add the mushroom, soup, pasta sauce, 2 tablespoons chili powder, 1 tablespoon pepper, 1 tablespoon salt. stir and reduce heat to medium low, cook additional 5min until heated thoroughly. do a taste test and add more salt/pepper to taste.
4. Serve / tupperware and top with shredded cheese.
The soup has the carbs in it but this should make 6-7 servings so it will be about 5carbs per serving. The original recipe was to have included a can of black beans (lots of carbs) and at this point to bake at 375 for 15minutes with refrigerated biscuits tucked along edge of caserole dish (really high carbs).. so instead, just removed the items that will spike your insulin and make you fat.. too easy.
