Low Carb Italian Burgers Supreme Recipe

Very tasty recipe for Italian Burgers.. just skip the bun since thats where all the carbs are anyway.

Ingredients
- 3lbs ground beef ($2.95 for this entire 5lb roll)
- 1pound Jimmy Dean type sausage or Italian sausage( $1.49 markdown)
- 1/4 cup Ragu "no sugar added" pasta sauce ($1.25 price match)
- red bell pepper, thinly sliced (.33 cents price match)
- green bell pepper, thinly sliced (.33cents price match)
- onion, thinly sliced (.33 cents a pound price match)
- slices of provolone or mozzarella cheese
1. Combine the ground beef, sausage, and the 1/4 cup pasta sauce in bowl.  Slice up the peppers and onion and put into seperate bowl.
2. Mrs. Lexus distracting me.
3. Form the meat into patties and put on George Foreman grill.. makes about 6 man size patties. at same time in wok with some olive oil, stir fry the vegetables
4. When burgers are done, put a slice of the cheese on top to melt.. for about 60seconds.. DO NOT CLOSE LID.
5. Remove burgers and put on plate, add 1-2 tablespoon of additional pasta sauce on top. then add some of the vegetables.
6. Serve.. if you have some shredded cheese you can put some of that on top also to pimp it out.
this is going to taste the best if you eat right after cooking. the additional burgers i will be eating for lunch or dinner as regular burgers without the veggies.  Carbs will be under 5grams per patty depending on what type of cheese and pasta sauce you get. Too easy

Low Carb BBQ chicken Pizza


Modified my Pizza recipe from years ago to be low carb.

Ingredients:
- 3 chicken breasts, boneless, skinless, --rinse and cut into small pieces
- 2 green peppers, chopped into small pieces
- can sliced mushrooms
- can sliced or chopped black olives
- low carb/ low sugar / "lite" BBQ sauce
- chili powder
- black pepper
- shredded cheese, Monterey Jack preferred
- optional : chopped onions, pizza style pepperoni slices, bacon pieces
1. Spray wok with Pam, stir fry chicken over medium high heat.
2. When chicken is almost done (just a little pink), add the green peppers, mushrooms, olives. stir and cook for additional 5 min
3. Add one tablespoon chili powder, 1 teaspoon black pepper and 1/2 cup BBQ sauce, mix well, turn heat off.
4. Serve or tupperware, top with the shredded cheese.
5. This used to be a pizza recipe. so if you want to go that route. maybe its your cheat day.. buy a premade pizza crust, pour this finished chicken mixture on pizza crust and spread out, top with the shredded cheese and bake at 375 for about 10 minutes or until cheese is melted.

A serving of this BBQ chicken will have 2-3 carbs from the BBQ sauce depending what type you can find

Did 24hour Fitness just screw you over?

no shit, there i was. walking out of my 24hour fitness, sitting on the counter was a stack of Poweraids... Free Samples, they received so many they were practically throwing them at people. so i know what youre thinking...my gym wouldnt give away products that are not healthy right. lets look at the labels. this 12oz bottle of poweraide has 21carbs,20of them sugar..as in high fructose corn syrup, which is almost the worst thing to put in your body, spiking your insulin and resulting in those carbs being stored as fat. compare it to another cocacola product..good ol coke classic..a 12oz can has 39 carbs..all from high fructose corn syrup..just like their product Poweraide.. why would you drink this stuff. if you are thirsty, drink water..dont fool yourself thinking you need some carbs after your workout because you dont.. drinking this poweraid has the same affect on your body as drinking coke classic. you wouldnt drink coke classic during and after your workout now would you. maybe thats why youre fat.
   ill put these in back of my pantry in case of nuclear war or tidal wave or something.

Latest Steal at Kroger- thin slice beef steaks

picked up these tasty packs of thin sliced beef steaks. marked down to move fast. 99cents each. each pack has zero carbs, 66grams protein.. going to be some stir fry in my future. Keep your eyes open for deals like this. thats what your freezer is for. would have been $25 regular day.

Low Carb Creamy Meatballs and Broccoli Recipe

Another easy  and quick recipe, low carb and tasty:

Ingredients:

- 18-24 of the Italian Meatball Squares made previously, recipe Meatball recipe
- bag of Frozen Broccoli Florets, thaw out prior to cooking
- one can of Cream of Onion Soup
- 1/4 cup sour cream
- 1/4 cup water
1. in Wok, on medium low heat, combine the soup and the water. Add the broccoli and meatballs.
2. Put lid on, and cook until meatballs and broccoli are heated, stirring every few minutes.
3. after about 10 min. turn off heat. stir in the sour cream. put lid back on for few more min to heat.
Serve or tupperware. will make about 4-6 servings. Recipe orginally included 2cups of potato wedges.. with those potatoes your carbs run to about 30grams per servings. with out is about 4-5grams per serving from the soup. salt and pepper to taste. Can add shredded cheese on top or Parmesan cheese when serving also.

Low Carb Italian Meatball Squares Recipe

A good one for some snacks or as base for other upcoming recipes.

Ingredients:
- 3 pounds of ground beef.. got this 5lb log for .99cents.. will use 3lbs of it
- one onion chopped fine
- 1/4cup low carb ketchup
- 1/4 cup bread crumbs
- 1 teaspoon pepper
- 1 tablespoon italian seasoning
- 1 teaspoon salt
Tasty optional substitution: use 2lbs beef and 1pound jimmy dean type sausage
1. combine all ingredients in large bowl, preheat oven to 400.
2. Spray a broiler pan with Pam, pile the meat mixture on top and smooth and shape so it covers the pan evenly. Then with spatula, cut into small squares.. dont need to cut all the way down yet. Put in oven for 25min
3. After 25 min, with spatula i rework the cuts to clean them up and cut all the way down to pan, i cook for additional 5 min. Dont be a tough guy, use 2 hands when removing from oven..that pan will be full of hot juice sloshing around underneath.
4. let cool and tupperware. will use as a base for some other recipes. Ive made this just to eat like this, have had as snacks..5-6 meatballs in bowl with some shredded cheese.. have tossed in with my scrambled eggs for breakfast. Can put 1-2 tablespoons of spaghetti sauce on top, add some Parmesan cheese... damn, the possiblities are endless.

Going to be about 4-5 carbs per serving, should be able to get 6-8 servings if you just eat like this

No Carb Sloppy Joe Burger Recipe

Another crazy easy recipe

Ingredients:
- 2pounds ground beef
- 1 packet sloppy joe mix (i know the picture shows 2)
- 1/4 cup low carb ketchup
optional: half an onion chopped
1. In large bowl combine beef, sloppy joe packet and ketchup.
2. Form patties and put on george foreman grill. Makes about 4 man-size patties.
3. When almost done i turn them over. just my style. if you are going to eat right away, you can add a slice of cheese on top and let melt. DO NOT CLOSE LID

Tupperware the remaining. I guess you can eat with a bun but thats where all the carbs are.. defeats the purpose. i eat on plate with fork and knife.. Add condiments of your choice. I added the no carb mayo and some of my pico.

Carbs are about 1carb per patty for just the meat. too easy.

Be Heads up and Get cheaper food

Had to pick up some eggs tonight, enough to last us to wednesday when the new weekly specials come out.. heres what i picked up.

3 dozen of the Egglands Organic eggs - $1.99 marked down then .55 coupon each
3 packs cheese - $1 each
7 packs pepperoni - .49 each

i had resigned myself to having to buy regular eggs at kroger at the full price of $1.66. Although these egglands eggs are "better", i am not paying $3.99 for a dozen "organic" eggs when i can get eggs on special routinely for .88 a dozen. thats a tradeoff i am making. i am willing to get 4 dozen regular eggs vs one dozen of organic eggs. kroger had 3 dozen of these organic eggs left on shelf, marked down, still with 8days left till "sell by" date. have had coupons in my book for months waiting for this type of markdown.. snatched them up. so got these "better" eggs for $1.44 vs the $1.66 for regular full price eggs.

the cheese was 10 for $10... see thats how they get you..you assume it means you have to buy 10...nope..means they are $1 a piece...nice try kroger

the pepperoni (no carb) marked down as well... those will make a tastey snack... few of those...wrapped in a slice of cheese...oh man... im getting ripped up just thinking about it.

keep paying full price if you want.. you dont have to give your money away like that.. look what i didnt buy for snacks... no candy bars, no chips, no crackers, no regular soda... its just too easy.

Low Carb Oven Baked Chicken Parmesan

another really easy recipe to make and only a couple of carbs

Ingredients:

- pack of chicken breasts, boneless, skinless - im using 4 breasts from this pack
- 2 cups parmesan cheese
- italian dressing
- garlic pepper
- parsley - you can use fresh parsley..i still had some leftover in cupboard

1. rinse and pat dry chicken breasts. pound flat with mallet so breasts cook even.
2. pour 2 cups parmesan cheese, tablespoon garlic pepper, 3 tablespoons parsley into big tupperware or on shallow plate.
3. pour 1 cup italian dressing into another shallow container. Get a broiler pan ready and spray with Pam. Preheat oven to 350.
4. dip chicken into dressing to coat, then into parmesan mix to coat then put on the broiler pan.
5. Bake for 35 min. cut into breast at thickest part to verify no pink.

Serve or tupperware. Pretty easy to make. The only carbs are from the dressing depending on what brand you get. Put the leftover parmesan mixture into tupperware to save for next time.

optional ingredients: add pepper or red pepper to mix to give it some kick. Also can make this with chicken tenderloins, cut back on back time though to not overcook.

4/14/2014 Weekly Shopping Trip

lets see how we did with this weeks groceries.

- 5 diet sodas (lasts 2 weeks) (coke zero -- nectar of the gods) $1.25 each price matched to $1.00
- 1 bottle low carb ketchup $2.50 matched to $2.00
- 2 cans of sugar free drink packets $2.18 each
- 2 green peppers .68 each
- tomatoes .94 lb matched to .48 a pound
- 2 containers mayo (no carbs) $3.98 matched to $2.50 then .75cent coupon
- bananas .48 a pound

total at full price $26, paid $20 . didnt need meat or chicken since freezer is still full from previous weeks.
notice what we didnt buy thats high carb.. no candy, no chips, no crackers, no cereal, no rice, no potatoes, no corn, no regular soda, no processed food (nothing in a box).. if you dont buy it you cant snack on it. too easy.

Low Carb Monterey Chicken Recipe

Monterey Chicken Recipe for two

Ingredients:

- 2 chicken breasts, boneless, skinless, rinsed
- 2 slices Monterrey jack cheese (im using pepperjack)
- lowcarb / low sugar BBQ sauce
- bacon
- Pico de Gallo My Pico recipe

1. Put the breasts and 4 slices bacon on george foreman grill.. The big george foreman works well for this..if you dont have one, maybe Santa will bring one this year.
2. Cut into chicken at thickest parts to verify no pink. Then put slices of cheese on top of chicken to melt. DO NOT CLOSE LID.
3. When cheese starts to melt put on plate and salt and pepper to taste. Then pour on 1-2 tablespoons of the BBQ sauce

4. Pile on the bacon and then 1-2 tablespoons of the Pico. if you have shredded Monterrey jack cheese you could pile on some more too.

This recipe is about 5 carbs per plate. All too easy.

Did you get fooled by that "Protein Bar" ?

Gym had these "Protein Bars" as Free Samples (probably because no one wants to buy them).. at first glance all you fatbodies probably gobbled these down thinking they are good for you.. first off, you are thinking it has to be good for you because they are being sold at the gym..they wouldnt have products in there that are crap just to make a few bucks would they?
   second, read the labels..oh goody..18grams of Protein it says on the front..look at the back now.  Carbs..lets see...holy shit...33 carbs in just this little bar..10 of them from sugar. you think your insulin will spike after eating this?? by the way, a snickers bar has 35carbs..so you are essentially eating a snickers bar after your workout.
   Dont be a slave, read the labels... what am i going to do with these?..put them in my pantry incase there is a hurricane or nuclear war.

Here are some books and videos i recommend you read if you are still a non believer that eating low carb makes you lose fat. the exact opposite of what the experts have been saying for 30years.

1. Watch the movie "Fathead" on netflix streaming, its also on Hulu.. several books are referenced in the movie..write those down and get at library.

3. Read "Good Calories, Bad Calories" as referenced in Fathead movie..here is book at amazon GoodCalories at amazon
after you read this book you will be pissed that you have been basing you dieting on incorrect information. by the way, since going no/low carb im down 50pounds without doing any cardio.

Low Carb Snack - Nuts

instead of reaching for that bag of high carb chips or sweats when you want to snack.. get some nuts..this bag as only 2 carbs (fiber carbs are free so always subtract fiber from the total carbs). these work perfect for your lunchboxes to take to work. can get a family size box of these a Sams Club or just get a big generic bag  of almonds / walnuts or whatever youlike. and put some in small ziploc bag. its too easy. dont be a slave anymore.

Low Carb Parmesan Chicken

Ingredients:

- boneless, skinless chicken breasts (easier to use a package of chicken tenderloins if you can get those cheap..i just slice up regular breasts).. i will use 4 breasts from this pack
- 3 eggs
- parmesan cheese
- 1packet taco seasoning mix

1. rinse and pat dry the chicken breasts then slice into thin strips..chicken finger size.
2. in bowl, wisk the 3 eggs
3. in another bowl pour in about 2 cups of parmesan cheese and add the taco seasoning mix, mix... use a tupperware type bowl to save whatever is leftover for the next time.
4. In large non stick pan, spray with Pam, put heat on medium low.
5. I put one breast worth of slice chicken into the egg wash..work them around to coat. Then with fork remove individually and put in parmesan mix to coat on both side. Put in pan.. Dont crowd the pan, you will have to make mulitiple batches..when you become a bad ass like me you can do it with 2-3 pans going at same time.
6. cook uncovered for about 5min or so..when edges start turning white, then with fork turn over and cook for another 5min or so.. then find the thickest one and cut into the thickest part to see if its done (no pink).

Remove to plate then tupperware. 3-4 pieces will be a serving. No carbs.. no carbs in the chicken, no carbs in the parmesan, no carbs in the eggs.

Serving suggestions:
- if you are not as hardcore as me, find some Pasta sauce/Spaghettic sauce that has "no sugar added" at least, then top this chicken with 1-2tablespoons of sauce. Also can sprinkle on some shredded cheese or more Parmesan cheese.

Low Carb - Easy TexMex Hash

a crazy easy recipe to make and low carb.

Ingredients:

- 3lb log of ground beef
- large onion, chopped
- 2 or 3 jalapenos chopped (i am using the some of the left over canned jalapenos from the Pico recipe)
- 1.5 cups salsa
- chilli powder and black pepper
- Mozzarella or Monteray jack cheese as a topping

1. Brown ground beef in wok, drain liquid as it accumulates. when meat has just a little pink left, add the chopped onions and jalapenos.
2. Turn heat to medium and cook another 5-10 minutes until meat is fully coated.
3. turn heat to medium low and add 1 tablespoon pepper and 3 tablespoons chili powder and the salsa. stir well.
4. stir every few minutes until heated.
Will make about 6 one-cup size servings. If eating right away, top with the shredded cheese. If not let cool in tupperware about 30min then refrigerate. If eating as leftovers, add the cheese when you microwave.
Note - years ago before i watched carbs, the original recipe included a can of diced potatoes. This will add about 35carbs to the entire wok. so about 6-7 more carbs per serving. not a huge amount but recipe tastes the same to me without it.
- do a taste test after youre finished...if you like more spicey add some more jalapenos or pepper.

Per serving this will have about 4 carbs before whatever is in the cheese you use.  This is dinner for the week
